Quinoa is a great substitute for rice, pasta or potatoes. It has a nutty flavor and comes from the Andes Mountains. Use about 75 g per person and add twice as much water or stock. Then let it simmer for 10 minutes and leave it closed for another 10 minutes after boiling.
