Unsweetened sushi vinegar is also called 'genmai su', or rice vinegar. You can not only season sushi rice but also make delicious dressings, extinguish wok dishes or hide an excess of salt. Also delicious in combination with other Japanese seasonings, such as shoyu, tamari, and sesame oil, or with the sweet counterparts ginger syrup and mirin. Sushi vinegar is brewed in an authentic Japanese way.
